AIRLINE FOOD AT TRULY FANCY (AND HYPER-EXPENSIVE) RESTAURANTS…....?

Well, it’s true…..in a way. 

Big-time chefs have discovered the benefits of looooooooong-cooking at relatively low temperatures in plastic BAGS - only the call it “sous vide”! 

Barber uses sous vide for practically every piece of meat and poultry he cooks at his restaurants. Yes, he said, he was “skeptical” when he first experimented (The aromas—they’re all trapped!”), and yes, it seems “anathema” to his beliefs. But he was overwhelmed by the results.

I admit to mixed feelings about this - the idea that “the end justifies the means” is something I’ve fought against all my life - but should we apply this principle in the kitchen?  WE REPORT, you decide.

RELAX AND ENJOY YOUR LIFE A BIT…...

That’s the advice that at least some authorities are giving these days…..

Chocolate and red wine are good for you!  Yoga causes as many injuries as jogging, and the mats you use have as many bacteria as airline blankets!  Ewwwwww!

Cycling increases the rate of both prostate cancer and impotence among devotees, and the overweight live longer than the skinnies (and if you don’t believe that one, YOU COULD LOOK IT UP.)

Don’t get me wrong—looking out for your health is a good thing…..you feel better for the years you have.  The question is whether we’ve been going overboard in response to the “health Nazis” who’ve just lowered normal blood pressure to 119/79, so all those kids with 120/80 are now “pre-hypertensives”.  THAT’s who we’re talking about!  READ THE WHOLE THING

IT’S PEACH SEASON IN Southeast TENNESSEE

We’re buying really nice (Gail the valley girl says not as good as she remembers in Chico, California) freestone peaches for 79 cents/pound.  They’re great in fruit salad, eaten over the sink, sliced on my breakfast bowl of cereal, and just FABULOUS in this very simple dish we call Gail’s Peach Cobbler.
